My husband gave me a new waffle maker for Christmas. It hasn't been used much because despite all my efforts to feed wholesome, unprocessed foods to my family... it's been Eggo 'round here lately (my 'morning sickness' seems here to stay). I admitted as much to my sister who insisted I try Mark Bittman's Overnight Waffle recipe. The beauty of it is that all the prep work is done the night before (when I feel capable of baking). And also? They are the best waffles we've ever had. It was unanimous. The butter content is a little high for everyday waffles perhaps, but they were a lovely Sunday treat. This recipe was printed out for the permanent collection. :)
Overnight Waffles from How to Cook Everything
- 1/2 teaspoon instant yeast
- 2 cups (10 oz) all-purpose flour
- 1 tbsp sugar
- 1/2 teaspoon salt
- 2 cups milk
- 8 tbsps (1 stick) butter, melted and cooled
- 1/2 teaspoon vanilla extract (optional)
- neutral oil for brushing the iron
- 2 eggs
1. The night before, combine dry ingredients in a large bowl. Stir in the milk, then butter and vanilla. Cover with plastic wrap and set aside overnight at room temperature.
2. When ready to cook, brush the waffle iron lightly with oil and heat it. Separate the eggs and stir the yolks into the batter. Beat the whites until they hold soft peaks. Fold them gently into the batter.*
3. Spread enough batter onto the iron to barely cover it; bake until the waffle is done, usually 3-5 minutes, depending on your iron. Serve immediately or keep warm for a few minutes in a 200 deg F oven.
*Note on the eggs: I did as the recipe instructed but it seemed like a waste of time for the whipped egg whites were very quickly deflated by the wet batter. My sister said she doesn't bother and I don't think I will in the future either. Big sisters are always right.
I have made something similar-without beating the eggs-from Orangette. I believe she calls them Raised waffles. They are amazing!! Unfortunately, I can no longer order waffles out as they are always sub par. Oh well...tough price to pay. :)

HA! Big sisters are just tired and a little lazy these days. I am trying to find a recipe now for a strata that will make up itself the night before.
