- 1 cup lemon juice
- 1 cup sugar
- 6 cups water
- 2 very, very happy children
It really is very good lemonade. We're planning on making more for the fourth like Little Town on the Prairie. I keep hoping the county will ban fireworks so I can just stay home. I mean, yes, fireworks are lovely and all, but sitting for hours in the Texas heat? Yuck.
I also whipped up another Stone Fruit Tea Cake. This go 'round I used peaches, strawberries and blueberries. An excellent combination. After some discussion, my husband and I agreed that we would try plums and cherries next. It's so adaptable. I love that we can use whatever is in season. I think my sisters would love this cake. :)
After all this, I was not in the mood to make a proper dinner (I never really am) so we just made simple chicken quesadillas. We should do that more often.
OK, I'm being summoned to read The Incorrigibles - no time to link, but we are still really enjoying it.
Who says quesadillas are not a proper dinner? Chicken, refried bean, and black bean show up on our regular menu rotation. Homemade lemonade, tea cake and quesadillas sounds perfect to me!

Fireworks are banned in our county but not at Fort Hood. We tailgate with lots of homeschool families in our local community college campus parking lot. We can watch the fireworks from there and don't have to worry about the traffic after.
It's still hot though.

I agree with Charlotte about quesadillas. They show up regularly round here.
Jenn, this post is so wonderfully cozy. It is the epitome of why I love your blog. It makes me want to get into my kitchen to whip up dessert and dinner. And lemonade!!!(Why didn't I think of that?) I feel like I've not been properly appreciating summer. Just cruising on auto-pilot.
Oh but I'm out of eggs so cake will have to wait. But I think quesadillas may be in order. And maybe some no-bake cookies.

I completely agree with Melanie. This is such a cozy post! (If one can be cozy in the hot summer =) I am not sure what we're doing for the 4th, but this lemonade might just be on our menu! And I've actually watched fireworks in Texas ~ about 10 years ago. Not really sure where I was but in the Ft. Worth area. We were by a river, I think ... I was with friends, and they were the guides. I just tagged along! Ha!!

I agree on everything -- the cozyness of this post, loving your blog, the need to make homemade lemonade ... and banning fireworks. My poor dog. It's going to be a long week for her as the neighbor kids blow things up every night .... :(

Oh, there is nothing so good as homemade lemonade! My eldest made me some on Mother's Day. She even froze it slightly, so that is was divinely delish!

I am sure that this sister would love this cake if someone could make my children stop eating all of the fruit the minute it comes in the door. I am not talking a few pints but I can't actually say the cost of the fruit being consumed without feeling dizzy. I suppose I ought not complain as it is probably healthier and certainly easier than whipping up a cake, but your photos are not helping me. Maybe you should come visit and bake the cake or stand guard over the fruit while I attempt it?
