I got the recipe for homemade ricotta from Gwenyth Paltrow's newsletter which is not something I normally read, but when I saw she had a feature on Ina Garten, I had to check it out.
It was a super simple and fun process and I wondered why I haven't been making it all along. The results were amazing. It's like no store bought ricotta I've ever had - smooth and so creamy with a mild flavor.
I didn't have any cheesecloth on hand, so I used linen which was cute and all but took a lot longer to drain.
It's both too rich and too irresistible to keep 'round the house regularly but I can't wait to use it for a cannoli filling this Christmas (which I've been pining over since leaving Boston).

Also, on a kind of grim note, it seems oddly fitting your posting this today considering the grisly headline in today's paper. I love ricotta. My grandmother made the best ricotta cheese pie ever made by two hands. Every Christmas.
Also, I get G/P's newsletter. If I were young enough to have a crush on her I would. :)

Oooh, I'll have to try ricotta pie Francis. I think I'd love it. As for Gwyneth, I'd probably have a crush on her if I was a man but as I'm not I just find her gorgeousness mildly annoying.
