Super Bowl Snack
This is one of my favorite foods. It was served at a July 4th party a few years ago and I was instantly hooked.
It is called "Texas Caviar" and I may have actually posted it before, but I don't know. It's tasty enough to post again.
2 cans black-eyed peas drained
2 avacado's - diced
1 sm red onion - chopped
1 bell pepper - diced
2 roma tomatoes - diced
1/3 cup veg. oil
1/2 c red wine vinegar
1/2 tsp salt
1/2 tsp sugar
pinch of garlic powder
mix together and chill at least 2 hrs.
serve w/ corn chips
I actually add a few more veggies (celery, carrots) and a little less oil and eat it as a salad. It is easy to prepare, a big hit at parties, and a little more nutritious than, say, dip based on some "cheese-like product".
Of course, I am not watching the Super Bowl this year. I plan on retreating to a dark room, cuddled up with little towel I received at the opening game where the Cowboys stomped all over the Giants. Sniff. Alas, the regular season was spectacular.

Your husband will be making that aforementioned cheese-like product. And for anyone else that feels their arteries need clogging, here is the recipe for the guy in the living room watching the game. And I should also say, NOT ROOTING FOR EITHER EAST COAST TEAM!!! One that got lucky, and one that cheats. Oooops, did I really just write that.

It sounds like a great superbowl party, minus the pouty faces. I love the sounds of both recipes so I think I might just make them. Oh no...dear husband accidentally booked trans-Atlantic plane flight to commence one hour before kick-off. Now, there's another pouty face. Did you just laugh out loud and gloat?
